Tired of the same old Christmas baking? These easy Chocolate Covered Rice Krispie Treats will shake up your usual holiday baking. The recipe comes together in minutes and is sure to impress. Your only problem will be keeping enough on hand for friends and family.
For this recipe, you’ll need Rice Krispies, marshmallows, butter, vanilla, melting chocolate wafers, sprinkles, and a cookie cutter of the shape you’d like to make. I stuck to trees, but you could easily do snowmen, candy canes, ornaments, or whatever your heart desires.
Press out your Rice Krispie cake on a large cookie sheet to approximately 1/2 inch or 1.5 centimetres thickness. Allow to cool, preferably overnight. If you cut too soon, your squares won’t hold their shape.

Lay out a piece of parchment paper on a cookie sheet. You’ll need this to set your cakes on to cool.
Melt the chocolate in the microwave, 30 seconds at a time. when most of the chocolate is melted, stir the rest until it melts. It’s much more reliable to melt your chocolate in a metal bowl over boiling water, but I’m just not that patient.
Now comes the fun part. . . dipping the shapes into the chocolate!
The chocolate dries fast, so it makes things easier if you have a second person with you to do the sprinkling.

You can leave them plain, or add a bit of food colouring to the chocolate for a different colour. I really like the taste of crushed candy canes on top.

Ingredients
- 6 cups Rice Krispie cereal,
- 40 large marshmallows,
- 1/2 cup butter,
- 1 tsp vanilla,
- 1 1/2 cups white chocolate melting wafers
- sprinkles
Instructions
- Melt butter, marshmallows and butter in a large bowl in the microwave for approximately 5 minutes, setting the microwave one minute at a time and stirring in between.
- Add Rice Krispies and press into a large cookie sheet. Allow to cool. Cut Christmas tree shapes with cookie cutter.
- Melt chocolate wafers and dip in Rice Krispie treats. Add sprinkles if desired. Work fast, as the chocolate dries quickly!
