Fall is officially here, school is back in session, and I find myself consuming a lot more coffee than I did in the summer. Some mornings are so hectic that I barely have time to make both coffee AND breakfast.

Lately I’ve been trying to prep more of my meals ahead of time, and I’m especially loving chia seed puddings.
I’ve come up with three chia puddings inspired my your favourite Starbucks orders that you can make on Sunday night and enjoy all week long. You’re welcome.
Caramel Macchiato Chia Pudding
This chia pudding is inspired by one of my favourite Starbucks drinks and ended up being my favourite of the three. Caramel sauce is the best tasting sweetener, but brown sugar will do in a pinch.
- 1/3 cup coconut milk
- 1/3 cup cold brew coffee concentrate, like Dusty Plains Coffee Co.
- 1 tsp vanilla
- 1 tbsp caramel sauce OR brown sugar
- 6 tsp chia seeds
Combine all ingredients in a small jar, stir, and chill in the fridge overnight.

Mocha Chia Seed Pudding
Originally I tried making this recipe with equal parts chocolate milk and cold brew. I personally don’t like the texture of using a milk product, but you can make it that way if you’re in a hurry.
- 1/3 cup coconut milk
- 1/3 cold brew concentrate such as Dusty Plains Coffee Co.
- 1 tsp vanilla
- 2 tsp cocoa powder
- 1 tsp honey
- 6 tsp chia seeds
Add all ingredients in a small jar and stir. Chill overnight in the refrigerator.
I like to eat this one as a mid-afternoon pick-me-up. It feels like a rich dessert, but without all the carbs.

Confession time. I originally made this recipe with a tablespoon of pureed pumpkin, but I actually didn’t like how it tasted. If you like pumpkin, you should keep it in. If you’re like me, omit the actual pumpkin and keep the spices.
Yes, I see the irony of making pumpkin optional in a pumpkin recipe.

- 1/3 cup coconut milk

- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 1 tbsp pumpkin puree, optional
- 6 tsp chia seeds
Add all ingredients in a small jar and stir. Chill overnight in the refrigerator. You can substitute the nutmeg, cinnamon, and cloves with a tsp of allspice.
And there you have it! Three easy chia seed puddings that are sure to fill your under-caffeinated void.
